wie adabei schon geschrieben hat, entweder in its mother's pouch oder in the pouch of its mother.
It‘s the table of his. ist nicht of-Genitiv + s-Genitiv, sondern of-Genitiv + possessive pronoun.
Das wäre dann für deinen Satz - The little kangaroo baby often hides in the pouch of hers.

"its" ist ein Bestimmungwort und danach kommt ein Substantiv = mother.
"mother's" ist possessiv. Danach käme ein Substantiv auch.
mother's purse, z. B.

Da ist ein Bestimmungwort, mit "mother's pouch" als Einheit als Substantiv.
Schwer zu erklären, aber so würde ich selber es sagen.
Mother, weil schon das of da ist. Sonst müsste es mother's pouch heißen
