The kanji for Aobajōsai is 青葉城西. 

The kanji for Seijō (青城) comes from the first and third kanji of Aobajōsai being put together.

青 can be pronouned as Ao (ex. 青写真 (Aojashin) - Blueprint) and as Sei (青春 (Seishun) - Youth).

The most common pronounation for 城 is Jou

That's how Aobajōsai can be shortened to Seijō. As for why it's not pronounced as Aojō, I'm guessing that it just doesn't flow (sorry, couldn't think of a better word) as well as Seijō, especially when it's suppose to be an easier-to-say alternative name.
